Ever since I went snowboarding in Wisconsin Saturday in 5 degree F. temps, I've been suffering with a cold and fever. But today I feel on the mend. Still weak but the worst is over. Anyway, hot oatmeal seemed like a nutritious energizing option on this cold winter morning.
I just took what I had in the kitchen, some carrots, ginger, brown sugar, and steel-cut oats. I also sliced some oranges on the side and added raisins, cardamom, and milk, to the hot oatmeal.
I have to admit, it really hit the spot! I feel good now. :D
Today it snowed all day and I decided to try a treat I saw in a coffee shop in Miami. Cocoa Puff Crispy Squares.
I just followed the recipe on the marshmallows bag for rice crispy treats. But I substituted the cocoa puffs for rice crispies.
A little sweet for every day but not bad for the day after snowboarding in freezing cold weather!
A couple days ago I experimented with baking in my new oven. I decided to try making a black-bottom oatmeal pie. I got the recipe from a Midwest inspired cookbook by Amy Thielen. The pie was amazing! I used the best butter and cream and chocolate I could find. It was scrumptious. I ended up sharing a couple pieces with some workers from the city who were installing some new floodwater pipes in our front yard yesterday. The rest was quickly consumed by family members.
This evening I made this delicious watermelon and cucumber salad from the cookbook Kale and Caramel. So delicious with pumpkin seed and Thai basil lime dressing on top and scattered toasted pumpkin seeds.
