I found this super nutritious and delicious dish. Being the middle of summer, I am trying to eat healthier food and this recipe is both. I found it on Youtube by someone I follow who is all about healthy eating. Markus and Kara. They have some great videos on healthy eating. And everything I've tried tastes so good.
Kara garnishes the dish with some pomegranate seeds. There are no fresh pomegranates in my local grocery this time of year. But I found some in the freezer section. Score!
I also spiraled the sweet potato. Then I chop it a bit because otherwise the strands are super long.
